My fennel plant went a bit mental and overgrown just a tad, so I decided to try to make pesto out of it. Who knew that fennel fronds pesto is so delish! 😋😍🌱

Managed to save this little guy 😆

Here goes the recipe (amounts are approximate)…
Shit loads of fennel fronds (about 3 big handfuls 😆)
Juice of 1 whole Lemmon
3 garlic cloves
1/2 cup of pine-nuts & walnuts
1/2 cup of olive oil
1 tsp of Himalayan salt
1/2 tsp Pepper

Toast the nuts in a dry skillet, combine all ingredients except oil in food processor and whizz it all up, adding the oil while it goes. Enjoy with your favourite gluten free pasta, on bread or mixed in soup or whatever other way you think of. 🙌🏼😊 Share your way in comments please✌🏼💜
